Menu Graduation final

15th November 2017 0 Comments

So yesterday we held the first Menu Graduation final and what an amazing day, hosted at the recently refurbished Crabtree. David Peevers our head of food wanted to create an event that celebrated our kitchen teams who work incredibly hard and are the beating heart of our pubs and to showcase the synergy of our head chefs and general managers, while also being able to look after our teams with some amazing food, a few beers, cocktails and wine.

We here at MPCo take food incredibly seriously and our syndicate final is a great opportunity for our teams to compete against each other to get to compete for some great prizes. The first part of the day we had the egg challenge. This relatively simple test was taken incredibly seriously and teams had practised no end in the run up to the event. Next up: the invention test, the teams were asked to come up something interesting from a basket of assorted items. We then had the grand finale where the teams had to devise their own 3 course showstopper menu. The thought and effort that went into these was astonishing, wines had been paired and some of the dishes even had stories that went along with them.

We were honoured to have Bruce Poole co-owner of Michelin starred Chez Bruce, along with the Michelin-starred Glasshouse in Kew and the three-rosette La Trompette in Chiswick, and Grzegorz Olejarka a renowned chef who has cooked in some of the best kitchens across the UK join our senior operations team in judging.

The Teams from the City Barge – Chiswick, Greyhound – Finchampsted, Wandle – Earlsfield, Oxford – Kentish Town had all created some amazing dishes and the teamwork and technical ability on display was incredibly inspiring.

The judging was incredibly difficult and the result incredibly close but in the end, the City Barge just came out on top. The City Barge was refurbished 3 and half years ago and the team of Rob Leader (General Manager) and Pat Lynch (Head chef) have been there from the start.

Pat and Rob are not only colleagues but are great friends who together have helped build an incredibly successful business. They can now look forward to a trip to Speyside.
